Chef Cam Dobranski is one of Calgary’s most talented chefs, who has helped define Alberta’s culinary scene. Over the last 30 years, Dobranski has spent time inside and outside the kitchen cultivating ideas, gathering inspiration and challenging himself to push the limits!
Chef Cam’s food can be described as modern freestyle, traditional technique mixed with a new age edge to highlight local and seasonal ingredients. Always an advocate of culinary collaboration, Dobranski participated in Cook it Raw and Terrior Symposium. He regularly speaks and shares his experience with the next generation of chefs at the SAIT Culinary Arts program. Recently, Chef Cam put his culinary skills to the test as a competitor on Fire Masters and Chef vs. Wild.

Dobranski is a serial entrepreneur! He has built businesses that span the food and hospitality industry, including restaurants, chef apparel and tablewares. In both the kitchen and in business, Cam is always a leader, looking towards ‘what’s next’ and defining trends along the way.

Restauranteur
Restaurants have been in Chef Cam’s blood since he was 15 years old working at his uncle’s diner. Since that time, he has owned and operated fine dining restaurants, wine bars, casual snack bars and a French-inspired brasserie. Currently, Dobranski is partners in one of Canada’s top restaurants Shokunin.

Chef Cam’s passion for beautiful plates to complement the food coming out of his kitchen lead him to co-found a new brand of restaurant & hospitality focused ceramics. Spirit Wares is redefining tablewares for chefs and home cooks. The wares are used across Canada and North America in top restaurants, chains, family-owned establishments, and on home dinner tables.

Cam Dobranski’s world travels started as a young chef when he moved to Switzerland to complete his culinary training in Zurich. Dobranski has collaborated and consulted around the world including in China, India, Mexico and at home here in Canada. Some recent events and projects have included Oysterlicious, Unico Beijing, and Wander The Resort.
Dobranski grew up fishing, gardening and learning outdoor skills in Northern Manitoba, Canada. He learnt to be confident, curious, and not intimated by the outdoors but instead to explore all that nature has to offer.
“I’ve learnt to hunt, deep sea and remote lake fish, forage, grow ingredients, and how to survive in the wild. I always appreciated nature, whether it’s scuba diving, hiking a mountaintop, or cooking over an open fire while backcountry camping.”
